Hello guys! It's a new week and I am here to ease your stress with another mouth-watering food recipe. I want to assume everyone knows Okro but here I am this week with a different twist to okra. Sit and enjoy as I take you on this journey of Okra seafood. This version of okra allows you to be creative and add any type of seafood of your choice. Fish, shrimp, oyster e.t.c
Ingredients
(1) Okra fingers
(2) Medium fish
(3) Shrimps
(4) Beef
(5) Red palm oil
(6) Ugu or spinach
(7) Sweet pepper or tatashe
(8) Red onion
(9) Habanero peppers (to your taste)
(10) Small seasoning cubes(to your taste)
(11) Salt (to your taste)
Before we proceed to the cooking, let's list some important points
• Clean the fish, some fishmongers can do this for you in the market. Then cut them into sizeable pieces.
• Shell and de-vein the shrimps.
• Grate the okra or cut with a knife(I prefer the former though, I believe it's less stressful).
• Chop the peppers and spinach
• Dice the onions
Preparation
Cook the beef with the stock cubes and half of the diced onions.
When that's done, remove the beef and add the fish. Cook for 5 minutes, at most 7 minutes so it does not crumble then gently take them out.
Add the shrimps and cook for 5 minutes and take them out.
In a different pot, add the red palm oil and immediately add the remaining onions(I don't like bleaching my oil), fry for a bit.
Add the okra and fry till it heats up all over.
Start adding the stock bit by bit and stir very well to trigger the elasticity of the okra. Don't add too much stock if you don't want your okra to be watery
When you've added enough stock to your taste, add the peppers and the spinach. Cover and cook for 1 minute maximum.
Add the fish and shrimps, add salt of necessary and stir very well.
Leave for 2minutes and your Seafood Okra is ready to be served with any swallow of your choice. For me, fufu is the best swallow to go with this pot of awesomeness and a chilled bottle of water
