YAMARITA: A DIFFERENT WAY TO ENJOY YOUR YAM

Since it is yam season, finding surplus yams in the market is no surprise. However, having to eat yam the same way may be tiring. So let's make a wonderful yam dish today, yamarita! This method of preparing yam is quite common in the north. It is literally just coating yam in some whisked egg before frying. Trust me, this is a different taste from your regular yam and egg. Let's cook some yamarita now.

Preparation Time: 60 minutes

Ingredients Needed:
Yam – 1kg or half a medium sized yam.
3 eggs
2 spoon of flour.
Vegetable Oil (300ml).
Teaspoon of ginger
Teaspoon of garlic.
1 teaspoon of ground pepper.
1 seasoning cube.
Salt to your taste.

You can also do this with some leftover boiled yams.

Step 1: Peel off the back of the yam, slice to any size, shapes and boil for about 15 minutes. It should be soft and well cooked. Drain and allow to cool.

Step 2 : Mix all the spices in a bowl and whisk in the three eggs (ginger, garlic, pepper, sweetener, salt plus the three eggs). Whisk all properly together and immerse the boiled yam in it.

Step 3: Set your frying pan on the heat and add just 300ml of vegetable oil. Allow to heat for about 1 minute. Immerse the boiled yam in your spiced batter and flip. Drop into the hot oil and fry. Fry and flip, don’t allow to burn. You can use a spoon to apply more of the spiced battar while it fries.

When it is done, serve it with your favorite sauce. You can add some fried fish or chicken if you want and that's it! Make sure to give your fees back after trying out this recipe!
