Kelewele (spicy fried plantain)


 Hell wonderful people! Trust you all are having a wonderful time wherever you are, you betcha! It's another semester and this week on "Kitchen", we're going to be discussing about a very simple but nutritious Ghanaian recepie called " Kelewele" or better put "Spiecy Fried plantain".

No need beating around the bust because I believe most of us already know how to fry plantain, that's a good start...in times like this when plantain cost so much to buy. But it all good, how then do we go about preparing this fine recepie?

Ingredients.

5 ripe plantain

1 tsp Cayenne 'Pepper'/ Hot grounded chili pepper

1/2 White Onion

1/2 piece Raw Ginger

1 tsp Anise Seed or fennel.

2 cloves Garlic

1 tsp Nutmeg

vegetable oil for frying

1 tsp Salt

Oil for frying.

Preparation.

(1) Get a knife and cut up your plantain. Chop the plantain into small cubes of about 1 inch size. Grate the ginger into a large bowl then add in chopped garlic and chopped onions. or blend them together. Now in the bow addl blended,add cayenne 'pepper', anise seed, nutmeg and salt. Mix well.

(2) Next is to add in your plantain cubes and toss to get soaked in the spice mix. Leave to rest for 30 minutes. Add enough oil into your pan and begin to fry your plantain the way you know best, just get it fried... don't burn it!

(3) After frying your plantain and each turning brown, serve hot in a sieve for the plantain to dry, and into a plate. Lightly dab the plantains with paper towels to soak up any excess oil and serve immediately.
