With the university cafeterias refusing to sell cooked rice at affordable and subsidised price, and with the evident hardship from the economy, phi-kitchen knows that many university students are struggling to make ends meet. However, one dish that remains a staple in many students' diet is jollof rice.
This delicious and hearty dish is relatively inexpensive to make, and it can be easily customized to fit any budget. Ever wondered how that roommate of yours cooks his or her jollof rice with little to no ingredients? Or how he or she managed to make the jollof rice delicious even with the least amount? Here is how to make jollof rice with the most basic ingredients available to you as a university student.
NB: The ingredients below cooks four cups of rice. If you are cooking for 3 to 4 individuals, divide or multiply per rice quantity.
INGREDIENTS
A sachet of 75m groundnut oil
3 sachet of tomato paste
One onion bulb
Curry and thyme
Maggi and salt
PROCEDURE
- Pour the oil into a pot and heat it over medium heat.
- Add onions, let the onions fry till it starts bringing out an aroma or turn brown not black (black it is burnt).
- Add the tomato paste and fry for another 5 minutes, or until it has changed color and lost its raw taste (two 70 grams of tasty tom jollof mix tomato paste).
- Add thyme, curry, salt, maggi chicken seasoning
- Add your rice
- Add 1 litre of water
- Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes, or until the rice is cooked through.
Dish and serve philosophically!
